Sourced from a renowned Riesling vineyard on the West Tamar, the grapes were whole bunch pressed, then naturally fermented in a large 600 litre demi muid and smaller 130 litre oak barrels. The wine was left on lees for 9 months where it underwent malolactic fermentation. It was then blended and bottled unfined, and unfiltered in February 2021.
