The vision of Lark Distillery was born over 30 years ago during a trout fishing trip in the highlands of Tasmania. Bill Lark, also known as the 'Godfather of Australian Whisky', realised that Tasmania had the perfect environment for whisky distillation. This led to the birth of Lark Distillery, the first Australian distillery to produce single malt spirit in over 150 years.

Lark Distillery is also known for its commitment to sustainability, being Australia's first carbon-neutral distillery. This commitment is reflected in their whiskies, which capture the pristine nature of Tasmania in every sip. Fresh water sphagnum peat is mined from Lark’s own peat bog in the Tasmanian Highlands, transported to the distillery, and used every day to smoke their Australian sourced barley. Oak casks are individually selected from Australia’s finest fortified producers to age their single malt spirit. The result is a rich and viscous spirit, with the house style of citrus on butterscotch.
